Answers to many questions and another cookie recipe

Grain free and Sugar free Chocolate Chip Cookies

1 c applesauce
 1/3 flax seed
1 tsp xanthan gum
2 Tbsp cider vinegar
30 drop vanilla stevia
1 tsp vanilla extract
1/2 tsp sea salt
1/2 c honey
1/2 c coconut oil
Mix all above with a mixer and then add 2 c almond flour and 1 c coconut flour and 2 tsp baking soda and 2 tsp baking powder. Then fold in 2/3 c chocolate chips.  Make into balls and slightly flatten and bake at 350 for 12 minutes. My family loves them and I just finished making these and made them last week also.

I also I get my honey from Harvest Valley Foods in Bellevue, Nebraska. I have had some people question recently about why I eat the way I do and I want to explain that to those who dont know. I have really grown in the last year to have such a passion in nutrition and how food heals your body and I plan to go to school for nutrition. Its my life I could go on and on about soaking grains and how eating grain free heals your gut and the benefits of coconut oil. My favorite book that explains coconut oil and helps you lose weight is Eat Fat, Lose Fat by Sally Fallon . I have to say by changing my diet to eating gluten free and using coconut oil in everything I have lost weight without even trying! Some people may think eating gluten free is hard but its not. I currently do not have any family members who are diagnosed with celiac, however I have a lot of friends that have celiac and it is hereditary. I started to eat gluten free to heal my gut which was the main cause of my dermatitis - skin  problem with my hands and still continue to eat gluten free after seeing how it heals your body in many other ways. If you have stomach gas or headaches then eating gluten free can help.

Pumpkin Chocolate Chip Cookies














1c sorghum flour
1/2 c coconut flour
1/2 c tapioca flour
1/4 almond flour
1 1/2 c sucant
1 tsp baking powder
1/2 tsp salt
3/4 xanthan gum
1/2 tsp cininamon
1/2 tsp ginger

In a large mixing bowl whisk all the above. Then add in

1/2 c almond butter
1/2 c pumpkin puree
2 eggs
2 Tbsp coconut oil
1 Tbsp vanilla

Beat all the ingredients until they form a nice big ball of dough. Then fold in 1/2 c chocolate chips. Form into little balls and flatten slightly on baking sheet or bar pan. Bake at 350 degrees for 15 min.

Enjoy! I made these last Sunday for our Thanksgiving dinner at church!

Chocolate Chip Spelt Cookies


1 1/2 c almond butter
2 1/4 c spelt flour
1 tsp baking soda
1 tsp sea salt
1 1/2 c maple syrup
2 tsp vanilla
1 1/2 c chocoalte chips

In a large bowl combine the flour, soda and salt. In a seperate bowl combine the almond butter with maple syrup and vanilla.  Combine the wet and dry and then fold in chocolate chips.

Roll into balls and flatten slightly. Place on baking sheet or bar pan that is what I cook all my cookies on. Bake at 375 degrees for 15 minutes. Cool 5 min and transfer to cooling rack. 

Again another healthy batch of yummy healthy vegan cookies my family couldnt keep their hands off. I made these last night and next time know I will definitely double them since they went so fast. Spelt flour is wheat but is the lowest gluten count of wheat. I used yummy raw almond butter from Trader's Joes and was very inexpensive compared to some almond butters. Also there is a good deal on maple syrup this month that is almost over on Amazon. If you click on the link in the recipe you will see it. For chocolate chips I used Enjoy LIfe which are also are sale for the month of November and if you havent printed the number of coupons on their website like I have than they could be cheaper.

Buckwheat Carrot Muffins

I doubled this the other day and made a huge batch.

2 ½ cups buckwheat flour
½ cup tapioca flour
½ cup sucant
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon sea salt
2 teaspoons cinnamon
1 teaspoon ginger powder
2 cups applesauce
¼ cup melted virgin coconut oil
2 teaspoons vanilla
1 cup grated carrots
½ to 1 cup raisins, soaked for 10 minutes in ¼ cup water (then drain)


IN a large bowl combine the flours, sucant, baking powder, baking soda, salt , cinnamon and ginger.  In a separate bowl combine the applesauce, oil, vanilla, carrots and raisins. Mix the wet and dry and try not to overmix the ingredients. I take a papertowl wet with coconut oil and rub the muffin tins and the muffins come right out. Bake at 375 for 25 min. 

These are good for a snack or breakfast. It rare I have cereal in my house. Don't get me started on how bad cereal is for you. Most breakfast at house contain of oatmeal, muffins, eggs, pancakes or waffles.  

Brownies

Its been awhile since I posted and now most of recipes contain mainly buckwheat or coconut flour. They are both high in fiber and gluten free! These brownies are super easy and I love making them. I made these this last Monday night when I have a house full with my brother in law and my husband's cousin and they loved them.

Melt in a saucepan 1/3 c coconut oil and 1/2 c cocoa powder.  Remove from heat and let cool. IN a mixing bowl, mix 6 eggs, 3/4 c honey, 1/2 tsp vanilla and 1/2 tsp salt. Stir in cocoa mixture. Stir in 1/2 coconut flour until there are no lumps. Pour batter into 8x8 pan and bake 350 degrees for 30 minutes.

Festive 4th of July muffins

These are my festive muffins made with very few ingredients and raspberries and blueberries! I love this time of year  berry season! Also It just makes me feel good when Im cooking something with so few ingredients. Also even though a lot of my recipes have gone gluten free there it isn't like is that many hard to find ingredients in them. My biggest worries were the flours but there arent a million different flours in my recipes and I find all of them either in the health market section at Hy-vee or Bakers and Wholefoods. Since every store carries different products in their health section, they have a place where you can request something they dont have and Ive done that and my latest request was coconut milk kefir and I can wait to use that in replace of regular Kefir!

1c coconut flour
1 tsp sea salt
1 tsp baking powder
6 eggs beaten
2/3 c honey
2/3 c coconut oil
2 tsp vanilla
1 c blueberries
1 c raspberries

1. whisk flour, salt and baking powder.
2. melt honey and oil in sauce pan and let cool comepletely and then mix in with eggs and vanilla.
3. mix wet and dry ingredients and then add in berries. fill muffin tins and makes about 20 muffins. bake 375 fir 25 min.
Enjoy! They are full of protein, fiber and good fats!! If you are not aware of this yet, coconut is a very good fat for you!!!!

No bake flax and oat chocolate chip bars

1/4 c honey
2 Tbsp sucant
1 Tbsp coconut oil
1/2 c almond butter
1/2 tsp vanilla
2 Tbsp gr flaxseed
1 c oats
1 c crispy rice ceral
1/2 c chocolate chips

In a saucepan, warm the honey, sucant and coconut oil for a couple min. Stir in the almond butter, vanilla and stir and until smooth. Remove from the heat and allow the mixture to cool a couple minutes. Stir in flaxseed, oats and ceral. Stir in chocolate chips. Press firmly into 8x8 pan and place into freezer to chill for 30min.  Cut into bars and  keep in refrigertaor.

These are so delicious and were made twice in the last week and never lasted. For oats I used Gluten free oats, however you can use any kind of oats and I used almond butter and that can be switched out for peanut butter and for chocolate chips instead of using my home made ones I used the Enjoy Life Brand chocolate chips and they are allergy free.

Flourless peanut butter cookies

This was the  best looking cookie of the bunch even though they were all yummy and eaten up so fast probably another reason I only took one picture. 

1 c peanut butter
1 c sucant
1 egg
1 tsp baking soda
1/2 tsp vanilla
1 c chocolate chips ( I used my homemade choc chips)

Mix evertyhing together but chocolate chips and then at then at the end. Grease hands and make 1 in balls. Place them on a cookie sheet and do not press them down. Bake for 10 min at 350. Let cookies set for 5 min after you take them out this helps them finish setting up.

When choosing peanut butter make sure you use peanut butter that has only peanuts and its oil listed in the ingredients.

Home made from scrach choclate chips




This is my new double boiler from Pampered Chef and the pictures are switched around and I had one more but its not showing up and Im not a pro at this yet.

3/4 c coca powder
3/4 c sucant or rapadura
1 c coconut oil
1 Tbsp vanilla extract

Place all the ingredients in a double boiler and set over simmering water until melted. Mix well. Spread mixture on a piece of parchment paper and cool in freezer. When hardened chop into little chips/chunks. Store in airtight container in the refrigerator.

Enjoy we all loved eating them and they are diary and soy free.

Gluten Free Oatmeal Cookies

These yummy delicious cookies dont last long. I made them at home and took them to bible study and I think I made them twice in one week and did not last. You dont have to be on a gluten free diet to eat these and dont require going out and buying a lot of crazy gluten free ingredients if you are not gluten free. I had most of it on hand and was excited they were well liked.

1 c brown rice flour
1/2 organic buckwheat flour
1 tsp baking soda
1 tsp salt
1 c coconut oil
2/3 c sucant
2/3 c honey
2 1/2 c GF oats (blended in food processor but not turned into flour)
2 egg
1 tsp vanilla ext
1 c org rasins
1 raw unsalted sunflower seeds


Whisk together the flour, soda and salt. Set aside, cream together the oil, sucant, and honey. Beat in egg and vanilla. Add the flour mix  and oats to sugar mix. Stir in raisins and seeds. Cook on 350 for 18 min.You can use different dried fruit and seeds if you want.

If you get to make this I hope you enjoy them as much as my family and bible studies ladies.
I know its been a long time since I posted on here, however Im coming back hopefully. I have two babies and Im trying to spend as much time with them as I can and right now they are sleeping, my only day not to nap this week means my only break of silence. I work in the middle of the night and sleep when my kids sleep. Im also coming back with lots of gluten free recipes as I have many reasons for that. About a month ago I got a big interest in going gluten free because if you dont soak your grains like whole wheat flour you have trouble digesting and thats one of the the many causes to why people end up going gluten free. My reason is I have extremely bad contact dermatitis / eczema on my hands and am doing my best to take care of it by going gluten free and diary free.

I made some homemade chocolate chips from scratch two days ago and then made some flourless peanut butter cookies with them so be watching for that post.

yummy healthy shortbread wedges















1 stick unsalted real butter
1 c whole wheat flour
1/3 c org powdered sugar

Preheat oven to 300. In a mixing bowl, cream the softened butter. Add 1 c whole wheat flour and 1/3 c organic powdered sugar. Mix to combine if too soft chill in the refirgerator for 10 min.  Pat into an 8in round cake pan and crimp edges with a fork. Bake until firm. 30 to 35 min and score into wedges right away, I used a pizza cutter. cool completely


I made these a few weeks ago, however I lost my memory card for a few weeks ago and couldnt wait to share this recipe and am so glad my memory card is back.  We had some mexican friends over the night I made these and they loved them. I hope you do too.

bannana oatmeal cookies




1/2 c unsweetened applesauce
1/2 c melted real butter
2/3 c raw honey
2 eggs
1 tsp vanilla
2 c whole wheat pastry flour
1 tsp baking soda
1 tsp cinnanmon
1 tsp cloves
3 med ripe banana mashed
2 c quick oats

Cream applesauce, honey and butter together. Beat in eggs and vanilla. Combine flour, soda, cinnamon and cloves, add to creamed mixture and mix well. Stir in Bananas and oats.  Drop teaspoonfuls on  baking sheet and bake at 375 for 12-14 min.

 Enjoy they went fast as I made them this Wednesday and shared with all my neighbors and then took them to bible study and were almost gone when I took them home that morning.

Pizza Potato Bake

6 potatoes
2 eggs
1 tbsp flour
1 c Pizza Sauce
2 c Shreeded Mozzerella
9 slices of nitrate free pepperoni

Peel and grate the potatoes like you would be making hash browns.  Mix them with two eggs already beaten and the flour and bake it in 8x8 pan for 45 min. Take out and add the pizza sauce and pepperoni and then cheese and then bake for another 15 min at all at 350 degrees.

Side notes: This dish could be super cheap or little more pricey. I made it really healthy and so it cost more, however you can make it however you want to. I used organic potatoes, nitrate free pepperoni (Applegate Farms) from Whole Foods and that is why I only used 9 because they are big slices. I also made my own pizza sauce.  Either way you make it its still delicious.  This is also good for those who cant have gluten since their are potatoes on the bottom instead of crust. I made this dish twice this week and everyone loved it who tried it.

Sour Cream Pound Cake

1 stick butter softened
1 1/2 cups sucant
1 bananna mashed
6 oz nonfat greek yogurt
1/2 c sour cream
3 eggs
3 egg whites
3 c oat flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract

Cream butter and sucant with mixer until well incorporated.  Add Banana, yogurt, and sour cream, beat on low until combined. Whisk eggs and egg whites in a seperate bowl. Sift oat flour with baking soda and baking powder in a large bowl.  Add butter and egg mixture alternately into oat flour bowl. Add vanilla, and pour batter into 10in tube pan. cook at 325 for an hour. 
This cake only lasted 24hrs at my house and was made late Wednesday night.

Whole Wheat Applesauce Cupcakes


1 1/4 c whole wheat flour
1 1/4 c all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1 c brown sugar
1/4 c raw sugar
2/3 c melted butter
2 eggs
1 1/2 c applesauce
1/3 c milk

In medium bowl, combine flour, baking soda, cinnamon, salt and nutmeg. Beat sugars and butter in a large bowl until light and fluffy. Add eggs and applesauce. Gradually add flour mixture alternately with milk until well blended. Pour batter into muffin cups. Bake 350 for 20-25 min. Makes 16-20 cupcakes.

To make frosting cool completely and all I did was mix a bag of organic powdered sugar and 8oz of cream cheese and little bit of milk and this made a big bowl of frosting and I have a ton leftover I might make some pumpkin whoopie pies or some more cupcakes with the frosting.

oatmeal bars


Im taking these to Sunday school in the morning. Was so hard no to eat them after I made them

2/3 c sugar
1/2 c applesauce
1/3 c olive oil
1 Tbsp maple syrup
2 c quick oats
1/2 c whole wheat flour
1/2 c all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp all spice
1/2 c raisins

In large bowl , beat the sugar, applesauce, oil and syrup until well blended. In a small bowl combine the oats, flours, baking soda, and allspice. Gradually beat into applesauce mixture until blended. Stir in raisins. Spread Batter into 9x13 pan bake at 350 for 15-20 min.

Chimichiangas



These are so yummy and easy and you can make extra filling and then bake some up whenever you want, we did that several times week.

1lb gr turkey
1 cup frozen corn
1 15oz can tomato sauce
2 tsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1 can black beans
2c shredded cheddar or Mexican cheese
8 burrito size tortillas

Brown the ground turkey and corn. Drain. Stir in tomato sauce and seasonings. Cook for 5 min and then add the beans. Lay the tortilla flat and add the meat mixture onto each tortillas and then add the cheese. Roll up the tortillas, and place them seam - side down onto a baking sheet. Brush the tortillas with melted butter. Bake at 350 for 30 min.

On a side note I use ground turkey for anything that call for ground meat. Either that or ground bison they are both so lean.

Blueberry Oatmeal cookies


These are so delicous that I made a double batch on Monday and didnt leave the house with them and they were still gone by thursday Morning.

2 cups quick cooking oats
3/4 all purpose flour
3/4 whole wheat flour
1/2 c dried blueberries
1/4 c ground flaxseed
1 tsp baking powder
1/2 tsp salt
2 eggs
1 c brown sugar
1/2 olive oil
1 tsp vanilla extract

In a large bowl, whisk the oats, flours, blueberries, flaxseed, baking soda, and salt. In a medium bowl, whisk together eggs, brown sugar, oil, and vanilla until combined. Pour liquid ingredients over dry ingredients and stir until just moistened. Drop tablespoons of batter on baking sheets and flatten slightly with your hand. Bake 375 for 10-12 min. Enjoy!!

Breakfast Berry Muffins


so delicious I think I consumed way too many after they came out of the oven. I made these last Friday for Breakfast after I got home from work.

1/2c raw sugar
1/2 c applesauce
1 1/2 c milk
1 tsp vanilla
2 tbsp oil
2 c whole wheat pastry flour
3/4 c cornmeal
2 tsp baking powder
1 c blueberries

Mix together oil, sugar, oil, vanilla, applesauce and milk. IN a seperate bowl, combine flour, cornmeal and baking powder and throughly blend together. Add dry ingredients to wet and stir together. When batter is almost blended, add berries. Stir together until just blended, careful not to over mix. Fill greased muffin tins 2/3 full. Bake at 350 for 30 min.

Kefir Pancakes




I have a yummy kefir waffle recipe already listed, however I have a yummy pancake recipe with kefir. I made these last Sunday morning before church.

2c plain kefir
1c whole wheat flour
1 1/2c quick oats
2 eggs
1 tsp baking soda
1 tsp sugar
1/2 salt

Mix all together well drop dollops on a greased skillet. You can even add some blueberries in them while they cook or eat them on the side.

Am I crazy

Ok so are there any people out there as crazy healthy as me or is it just me? It seems that my teenage sister and husband think Im crazy for buying so much organic food. This is what I buy organic: potatoes, apples, carrots, ketchup, yogurt, milk, coffee, chicken, olive oil, eggs, butter, maple syrup, diced tomatoes, dried fruits, sugar, vanilla extract, oats, blueberries, applesauce, ice cream, broth, peanut butter and the list could go and I would have to go open my cupboards and fridge. I basically buy anything organic that has artificial flavorings, hydrogenated oils, and anything in the ingredients that I can not pronounce or know what it is. I would love to hear anyone's opinion on if they buy organic and what they buy.

Pumpkin Cranberry Spice Cake




I made this cake on Monday for the second time and never seems to last very long.

Pumpkin Cranberry Spice Cake

1 1/4 all purpose flour
1 cup whole wheat flour
1 tbsp cinnamon
2 tsp ground ginger
1 tsp allspice
1 tsp nutmeg
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1/2 c raw suger
1 c honey
1/3 canola oil
3 large eggs
2 tsp vanilla extract
15 oz can pumpkin
2 tsp grated orange zest
2 tbsp orange juice
2 tbsp water
1 cup dried cranberries

Heat oven to 350. Spray a bunt pan with cooking spray. In a medium bowl, stir together both flours, all the different spices, baking soda, baking powder and salt.
In a large bowl, combine the sugar/honey, oil, eggs and vanilla. Beat with an electric mixer until mixture is thick and pale. Add the pumpkin, orange zest and juice and water. Beat on low until smooth. Sift the dry ingredients on top of the pumpkin mixture just until combined. Stir in the cranberries.
Spoon the mixture into the bunt pan, smoothing out the top. Bake 40-50 min or until a kinife comes out clean out of the center. Let the cake cool on a wire rack.

BEST Waffle Recipe




This is really one of my favorite waffle recipes, however I have so many. This recipe contains Kefir and it is a cultured milk that comes in bottle. It has coupons all over for it and can be found in the Kefir section at Whole Foods or in the Health Market section at Hy-vee and at vegetable section of my Bakers. Also for sugar I use raw sugar, however u can use whatever you prefer for sugar. This recipe also calls for unbleached cake flour, which someone finally came out with this fall. I was so excited as I dont use any bleached flours and never found a unbleached cake flour until this past fall. It is made by King Arthur Flour and u can find it at some Bakers and Whole Foods and also King Arthur Flour website.

BEST Waffle Recipe

2 large eggs
1 3/4 c plain Kefir
1/2c = 8tbsp = 1 stick of butter melted and cooled to room temp
2 tsp vanilla extract
2 c unbleached cake flour, or you can use unbleached all purpose flour
2 tbsp sugar
2 tbsp baking powder
1 tbsp baking soda
1 tbsp salt

In a medium bowl, beat together the eggs, kefir, melted butter, and vanilla. In another bowl whisk together the dry ingredients. Combine the wet and dry just until smooth.

Use 1/3c batter and cook on the waffle iron until golden brown or to your liking.

Yogurt Honey health muffins




These are one of my favorite muffins and I make a double batch and they still harldy last a week long.

Yogurt Honey Health Muffins

1 1/2 c Whole Wheat Pastry flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
4 1/2 tsp sugar
2 tbsp rolled oats
1 tbsp diced dried cranberries
1 tbsp diced dried apricots
1 tbsp unsalted sunflower seeds
1 tsp grated orange zest
1 tbsp toasted bran
1/2 c nonfat yogurt
1/4 c honey
1 tsp vanilla
8 tbsp = 1stick of unsalted melted butter
2 eggs

preheat oven to 350 and grease a mini muffin pan.

In a large mixing bowl, sift together dry ingredients. Add the oats, dried fruit, seeds, orange zest, and bran and mix to combine.

In another bowl combine the yogurt, honey, vanilla, butter and eggs and stir until the ingredients are well blended. Pour the yogurt mixture into the dry ingredients and stir to mix, just until they are incorporated. Try not to over mix.

Fill muffin cups 2/3 of the way full with batter. Bake for 20 min or golden and cooked through.

Pie Crust

This is a wonderful Pie Crust that I use to make my delicious peach and raspberry pie in the summer. A friend of mine that I went to college asked me if I had a good recipe for pie crust and I couldn't help but share it with everyone since is so healthy with no shortening and includes whole wheat pastry flour. The whole wheat pastry flour is easy to find, you can find it in Hyvee's health mart baking section and at Whole Foods. The brand I buy of whole wheat pastry flour is Bob's Red Mill. The pie crust can be frozen up to 6 months or refrigerated up to 2 days.

1 1/4 c whole wheat pastry flour
1 1/4 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
4 tablespoons cold unsalted butter
1/4 cup reduced-fat sour cream
3 tablespoons canola oil
4 tablespoons ice water


Whisk whole-wheat flour, all-purpose flour, 2 tablespoons sugar and salt in a large bowl. Cut butter into small pieces and, with your fingers, quickly rub them into the dry ingredients until the pieces are smaller but still visible. Add sour cream and oil; toss with a fork to combine with the dry ingredients. Sprinkle water over the mixture. Toss with a fork until evenly moist. Knead the dough with your hands in the bowl a few times ,the mixture will still be a little crumbly. Turn out onto a clean surface and knead a few more times, until the dough just holds together. Divide the dough in half and shape into 5-inch-wide disks. Wrap each in plastic and refrigerate for at least 1 hour.

This bread is so healthy and delicous, I doubled my recipe and am taking a loaf to bible study in the morning. It can be ate for breakfast and served with some peanutbutter.

Applesauce Bread

1 1/2 c whole wheat flour
1/2 c honey
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1tsp cinnanmon
1/2 tsp nutmeg
3/4 c applesauce
2 eggs
1/4 c butter, melted

Mix dry ingredients. Make a well in teh center and add applesauce, honey, eggs, and butter. Stir well. Pour into a greased bread pan. Bake 45-55 min at 350 degrees.

Coconut Curry Chicken



This was last nights supper and turned out so good that Gilberto wants it for next Monday night when his brother and cousin come over for supper.

Coconut Curry Chicken
2med potatoes, peeled and cubed
1 sm onion
4 boneless skinless chicken breast halves (4oz each)
1 cup coconut milk
4 tsp curry powder
1 garlic clove minced
1 tsp reduced sodium chicken bouillion granules
1/4 tsp salt
1/4 tsp pepper
2 cups hot cooked rice


place potatoes and onion in 3-4qt slow cooker. In a large nonstick skillet coated with cooking spray, brown chicken and then transfer to slow cooker.

In a small bowl, combine the coconut milk, curry, garlic, bouillon, salt and pepper an pour over chicken. cover and cook 5hrs.

Serve chicken with rice and garnish with raisins, coconut and peanuts if desired.

This is a short post and the next post will be the recipes Ive made this week. I love being healthy and however some people think Im crazy for not having bags of chips or frozen foods and packaged goods around my house, however I know that is what we were created for, to eat food not processed.

Occasionally I make a yummy cheesecake dessert and even though its not the healthiest food out there I will still post the recipe and share it since I love to share my recipes.

I also use a lot of honey and organic grade B maple syrup inplace of sugar in some recipes.
