Another wonderful Almond flour recipe, everyone keeps telling me they like almond flour better than coconut flour so Ive been busy with the almond flour lately. Took these to bible study a few wks ago and also gave some to a wonderful friend.
2 1/2 c almond flour
1/2 tsp bak soda
1/2 tsp cinanmon
1/4 tsp salt
3 eggs
1/3 c honey
3 tbsp butter melted
1 tbsp vanilla
Mix wet and then dry and then together. Next the filling
3/4 c finely diced fresh peaches
1/4 c finely chopped nuts ( mine were slivered almonds and I chopeed most of them)
1tbs sucant
1/4 tsp cinanmon
1/4 tsp vanilla
Mix all in a small bowl. Have a nice prepared muffin and add the muffin batter first by a tbsp and then the peach filling by a spoonful and do both layers again. Bake at 300 for 25-30 min. My peaches were really juicy so might have taken me right at 30 min.
This is my life recipes blog and am super excited about it. Its been on my heart to share my wonderful recipes with the world and it came to me to do it this way. Im a super health freak that bakes nothing without whole wheat flour and rarely will my finished product not be 75% organic. I believe eating well helps you be want to be a better person.

Almond flour Chocolate chip cookies
I love making these cookies and the last time I made them I quadrupled the batch and took them to a potluck and got rave reviews and then next week am taking them to work for our bday celebration. Isnt cool that at work we have September month full of birthdays and also at bible study! These yummy cookies are gluten, grain free and they are vegan! Now here is the recipe and hope to have a pic to go with it soon!

Peanut Butter Banana Muffins
These were so delicious Ive made them only two times and they dont last long. The most recent was two weeks ago and I took them on my wknd trip to Lincoln to attend Beth Moore Conference. They were great for snacking and for breakfast.
4 eggs seperated
1 c peanut butter
2 ripe bananas
1 tsp vanilla
1 tbsp honey
mix egg whites till they foam. In a different bowl beat egg yolks then add peanut butter, bananas, vanilla and honey. then fold in egg whites.
Add to muffin tin and bake 325 for 25 min. Enjoy!
Im always baking but am busy catching up on all my dishes and wish I could post more. Its a true story cuz the month of May 5lbs of almond flour lasted me a month and this past week I received another order and it only lasted me a week. I doubled almost everything I made thats why it didnt last. I made almond flour banana bread, strawberry and zucchini bread with almond flour, the best almond flour chocolate chip cookies.
And also homemade pizza crust to make grilled pizza with almond flour.

Egg muffins
I used 8-10 eggs and 1lb ground sausage and 1 red pepper and some Simply Organic Chophouse Seasoning and 1/4 -1/2 c cultured sour cream. Whisk everything and and put in coconut oil greased muffin tins and bake 350 for 20 min or until a knife comes out clean.
I really want to start making my own yogurt and buttermilk. I made my applesauce recently and just have to order the starters to make the yogurt and buttermilk and will be on my way to making my own!

Pumpkin Brownies
I love these brownies and make them a lot and they never last and are super easy. I always have the ingredients and it only takes 5-6 ingredients.
1 c pumpkin
1 egg
1 c almond butter
1/3 c raw honey
1 tsp baking soda
1/2 tsp cinanmon
Mix all together and bake in 8x8 pan for 25min at 350 and enjoy!

Almond Berry Cereal
This mornings breakfast was super easy, fast, nourishing and healthy! I made this for 4 of us in my family so I made a big batch. I used a can of coconut milk plus an a little more that was left in an open can previously open a few days ago. Topped the coconut milk with frozen blueberries, sliced Almonds, cinnamon, and flax meal. Can you say super easy. Also the next paragraph I was what we had to eat over the past few days and I put it on my facebook page and didnt get posted on here yet.
Last night for dinner had almond flour pancakes tried them with the almond flour from Trader Joes and this morning for breakfast had apple pie oatmeal in the crockpot along with beef bacon from Trader Joe's and yummy green juice and for lunch today were having spinach salad with my own roasted chicken and for supper tonight were having Honey Garlic Chicken!
Now im off to make some of my buckwheat chocolate sugar free muffins. If I havent told you one of the reasons I make a lot of the stuff with buckwheat is I bought 25lbs in bulk a few months ago along with coconut flour.

Slow Cooked Pumpkin Pie Oatmeal
I have a million recipes that Ive been making in the last month however I wanted to get this posted since I had so many requests.
can of 15 oz pumpkin ( i got a great deal for this case of pumpkin through amazon at the end of December)
5 c water
1 1/2 c steel cut oats I used the bob's red mill gluten free steel cut oats hoewever regular steel cut oats are fine
1/4 c honey
1Tbs maple syrup
1 tsp cinnanmon
1/2 tsp nutmeg
Mix everything in the crockpot and I would recomend using a 4qt size crockpot if you want to cook this overnight for six hours. Since I turned the crockpot on but forgot to plug it in and I used my big 6qt slow cooker it only took 3hrs.
There are many places to get local honey and I like All about Bees in Ralston and Harvest Valley Foods in Bellevue and there is a place in Council Bluffs I get my local honey however I forget their name so will make sure I get that next time I go. I buy my honey by the gallon so it usually last me for 3 months or so.
